Controversy of Jainism

The article given explore the Jainistic act of fasting until death. While there is all this talk about "purifying the soul of karma's", isn't Jainism much about nonviolence?  Their religion is largely based on cycles and fluctuations of happiness and unhappiness.
Also, why is there a constant obsession in Jainism with food in general? I read that there is an 8+ day fast in which you can only consume water. Why is is that Jainism thinks food cleanses the body? Does it have a specific connection to the karma's themselves?
